Condiments

1. Taking a sample

Apply a drop onto the prism surface with a plastic spoon. For a paste-like sample, take 20-50 grams and mix thoroughly with a plastic spoon before applying the sample onto the prism.

2. Measuring Method

 ● Hand-Held Refractometers

1) Apply a drop of sample onto the prism surface with a plastic spoon. Make sure the sample is evenly spread over the prism when closing the daylight plate.

2) Look through the eyepiece. Read the boundary line where the blue and the white color meet. This is the Brix (%).

3. Example for measurement value

 ● For condiments, the displayed value shows the total percentage of all soluble solids, including sugar, salts, acid, protein, oil, spices, starch, and other soluble solids.

 ● Measuring the Brix is extremely useful when checking the mixing ratios and to ensure consistency of all outgoing products from the factory.

 ● Measurement of the concentration of condiments and soluble solids are defined by JAS (Japan Agricultural Standards).
