Tofu, Soy milk
1. Taking a sample
Place 20-50ml of soy milk into a beaker and mix well with a plastic spoon.
2. Measuring Method
● Hand-Held Refractometers
1) Apply one or two drops of soy milk to the prism surface. Close the daylight plate and make sure the sample is distributed evenly over the prism while eliminating any air bubbles.
2) Look through the eyepiece. Read the boundary line where the blue and the white color meet. This is the Brix(%).
3. Brix of various Soy Milk samples
Approximately 10%
4. For Measuring the Concentration of Soymilk
1. Measure the concentration of soymilk during the making of tofu (bean curd).
2. Measure the concentration of soymilk during the making of soymilk drinks.
A refractometer is useful for quick measurements to determine the concentration.
* Depending on the manufacturing process or soybeans used, the soymilk produced may vary.
Therefore the Brix value may vary between the soymilk produced.
